These delicious little morsels are packed with goodness without the regular nasties; gluten, dairy, sugar, sugar and more sugar!
Gluten/dairy/refined sugar free, paleo.
1 1/2 cups of almonds or a mixture of nuts – whole or ground
1/2 cup dried fruit – I used dates*
1/4 desiccated coconut*
1/4 sesame seeds
1/4 tsp vanilla**
1 free range organic eggs
1 tsp coconut oil
Preheat oven to 170 degrees. Combine ingredients except sesame seeds in the food processor and process until ‘breadcrumb size’. Add the sesame seeds and process until mixed through.
Press into a loaf tin lined with baking paper and cook for 15 – 20 minutes or golden around the edges.
Allow to cool, cut and store in the fridge or freezer.
* ensure the dried fruit and coconut do not contain sulphites; I either use organic or pam’s desiccated coconut.
** a lot of vanilla extracts contain sugar syrup etc. I have been ‘Mrs. Rogers’, available at Countdown supermarkets in NZ but am on the hunt for a better one.
