Easy, ‘Cheesy’, Vege, Pizza Loaf

Every morning without fail we have exactly the same conversation with wee Maggie. “Hiiii” we say “Hiiiiiii” she replies. “How are you?” we say “Good” she replies.  “Did you sleep well?” we say, “Yessss” she replies. “What would you like for breakfast?” “TOAST” she replies.

While there are one or two brands of commercial gluten free breads that I buy and accept as reasonable breads for Maggie to eat, it is hard to avoid breads with added seed oils, soy flour, sugar, nasty starches and preservatives.  For this reason we do have a loaf of one of the better brands in our freezer for emergencies but as much as possible, we bake our own bread.  I loooooove Aunt Bee’s Sourdough. I was there as she made her third attempt to perfect her recipe and man was it worth the several trials.  If however you don’t have the kefir sourdough starter or don’t have the time to be continually feeding it and want to make a loaf quickly then this recipe is for you.  It is as never fail as the convo that starts our day.

Easy ‘cheesy’ vege, pizza loaf.  A great day starter with eggs, or avocado and tomato or just serve on it’s own for a snack!


1&1/2 Cups Almond Flour, 1/2 C Brown Rice Flour, 1/2 Cup Psyllium Husk, 1/2 t mineral salt, 1/2 t baking powder, 1/2 t baking soda, 4 large eggs, 2 T Olive Oil, 3 T Pumpkin seeds, 1 T sesame seeds, 2 Cups grated vegetables (I used carrot, zucchini, red onion, red capsicum and beetroot), 2 T parsley (finely chopped), 1 T dried oregano, 1 T nutritional yeast (this is where the cheesy flavour comes from), 1/2 t ground cumin, 1 t apple cider vinegar.

To Make:

1. Preheat oven to 170 degrees

2. Combine all dry ingredients in a bowl (except seeds)

3. Combine all wet ingredients in a bowl

4. Add wet ingredients to dry and mix until well combined

5. Pour into a greased and lined loaf tin and top with seeds.  Bake for about 35 mins or until top is just golden.

6. Remove from oven and enjoy warm or wait until it’s cooled.  Can be toasted in the oven if you like.
