Banana Choc Chip Muffins -Nut free!

As there is such a high omega 6 content in Almond Flour, we try to switch up the flours we use in our muffins so we don’t disrupt our omega 3:6 ratio.  Today we used coconut flour.  It’s paleo, naturally sweetish and is cheaper than ground almonds too, albeit thirsty and at times a temperamental flour and a texture to adjust to, we think it’s delicious.  I walked past muffin break in the mall this week and saw a beautiful looking Banana Choc Chip Muffin staring at me.  To satisfy the craving I had for it I came home and made some Maggie-friendly banana choc chip muffins.

Ingredients:

1 Cup Coconut Flour, 5x Large Eggs, 3 Ripe Bananas, 5 T Coconut oil, 2 t Cinnamon, 1 t vanilla, 1/2 t mineral salt, 1 T sweetener e.g Honey or rice malt syrup (nice for adult taste buds but for the kiddies it is sweet enough with just the banana) 1/2 Cup Home-Made Mini Choc Chunks (Cacao 1/4 cup, Coconut Oil 1/4 cup, Rice malt syrup or Honey to taste (about 1/2 T).

To Make: 

1) Make Choc Chunks by melting the cacao and coconut oil together in a small pot on the stove and add rice malt syrup, take off heat and stir all together.  Lay a sheet of baking paper out over a dinner plate and pour the liquid chocolate on to the plate. Place in freezer til set (about 10 mins or so).  Once chocolate is set, cut up in to small choc chunks ready to add to your muffins.  You could use Lindt 90% chocolate and cut in to little chips if you do not want to make your own.  I personally wouldn’t use any less than 90% cocoa as the remaining % is sugar (and sometimes emulsifiers and soy etc). 90% cocoa is still 10% sugar.

2)  Melt the 5 T coconut oil and sweetener (if using).

3). Mash the bananas and add beaten eggs and vanilla.

4) Add remaining ingredients except chocolate chunks.

5) Fold in choc chunks with a spoon

6) Pour in to greased and lined muffin tin and bake for 20 mins until top of muffins are golden.

7) The home-made choc tends to bleed a little but solidifies again when cooled.

Naughty me had a smear of organic salted butter on one just now and it really was delicious! Be warned these little morsels are more-ish. (Butter is the only dairy we have in our household due to the good fats for our brains.  We are not allergic but do limit the amount and especially don’t eat if we have a slight sniffle due to dairy being mucous producing)
