Gingerbread Bliss Balls

The silly season is almost in full swing, so I thought I would get ahead and start stocking up the freezer full of festive treats.

Unfortunately these quick and easy creations did not hep the plan; most of them were devoured by my little elf not long after I whipped them up and the few that were left vanished that evening – oops!

Gluten, dairy, refined sugar and egg free, paleo, raw vegan, nut free option.

Ingredients:

1/2 cup almond meal* substitute for more sunflower seeds or coconut for nut free option
1/2 cup sunflower seeds
1/4 cup desiccated or shredded coconut + extra for coating
4 – 5 fresh medjool dates, or dried dates soaked in cold water for a few hours
1 Tbs coconut oil
1 Tbs almond butter
1 tsp ground ginger
1/2 tsp ground cinnamon
Pinch of nutmeg

Directions:

1. Process ingredients in a food processor until fine-ish.

2. Roll into balls and coat with extra coconut. I rolled them into different sized balls to make silly snowmen 🙂

3. Set for half an hour in the freezer, then store in the fridge.
