Every now and then, Finn leaves me gob smacked when it comes to his food choices. Like the first time we gave him curry, I could not believe my eyes. I had never seen him eat SO much – he loved it!
These fritters were much like his first curry…he could not get enough. We almost hit a speed bump when he discovered he could pick some of the peas out of the fritter (while exclaiming PEAS!), however after a few ‘yes Finn, they are peas’, we were back on track and he cleaned up his little plate of fritters before I knew it!
And the best part – they are nothing fancy and can be whipped up out of whatever you have in the cupboard 🙂
1/2 cup cooked peas
1 cup cooked quinoa
1 egg white
1/4 cup gluten free flour (I used a mixture of brown rice and channa/chickpea flour)
1 Tbs melted coconut or olive oil
A good dash of mineral salt
A handful of fresh mint and/or basil
1. Whisk egg white, flour, salt and oil.
2. Add peas and roughly mash, then add quinoa and mix well. Add more flour if the mixture is too soft and not holding together well.
3. Cook in small batches in a hot pan with coconut oil.
