Vanilla Cookies

For Maggie’s birthday last year, I made a batch of heart and tea cup shaped vanilla cookies and iced them with pretty pink and white icing. Neither Finn or Maggie ate them, of course, but they fit perfectly with Maggie’s ‘some bunny’s one’ pink and white party theme as her birthday is so close to Easter.

Simple vanilla cookies are the perfect treat for special occasions like this and I thought it was about time that I created a recipe that our beautiful kiddiwinks can also enjoy every now and then.

Gluten, dairy, refined sugar free.

Ingredients:

1/2 cup almond meal (you could try coconut or sunflower seeds for a nut free option)
1/2 cup rice flour
1 – 3 Tbs honey, depending on how sweet you would like the cookies
1 egg
1 Tbs coconut oil
1 tsp baking powder
2 tsp pure vanilla extract (sugar free)*
* if using traditional vanilla essence, use 1/2 – 1 tsp as it is much stronger

Directions:

Preheat oven to 180 degrees on fan bake.

1. Process all ingredients in a food processor until smooth.

2. Roll out to roughly 5mm on baking paper and cut with cookie cutters.

3. Bake for around 10 minutes (if cookies start to brown, remove immediately!).
