Pakora Patties (Egg Free)

It is the day before our ‘big shop’ this week. You know the drill; nothing left in the pantry and the bare minimum left in the fridge / freezer.

We ended up finding some simple ingredients to create egg-free fritters which I thought we would quickly share…

Gluten, dairy, refined sugar, egg and nut free, vegan.

Ingredients:

3/4 cup chickpea flour (besan flour)
1/4 cup almond milk or water
1/4 tsp mineral salt
1/2 tsp baking powder
Spices (optional) – I used ground turmeric, cumin and coriander
Roughly 1 cup grated or finely chopped vegetables (I used zucchini, broccoli and corn)
Coconut oil for frying

Directions:

1. Combine all ingredients except vegetables and whisk until smooth.

2. Add vegetables and mix well.

3. Fry in small batches in coconut oil (roughly 1 or 2 Tbs) until golden and cooked through.

Voila!
