Latte Slice

When it’s coffee break time for mummy bear (it does happen every so often!), this slice is the perfect accompaniment.

Gluten, dairy, refined sugar and egg free, raw vegan, paleo.

Ingredients:

Base:

1/3 cup desiccated coconut

2/3 cup almond meal

1 tsp coconut oil (if needed – it depends on the dates you use)

6 fresh/medjool dates

1/4 tsp vanilla

2 Tbs raw cacao

Topping:

6 fresh/medjool dates

1/4 cup coconut oil

1/4 coconut cream

1/2 cup fresh espresso coffee

Ground coffee or walnuts to serve

Directions:

1. Soak 6 dates (for topping) in 1/2 cup fresh espresso and set aside for at least 3 hours or overnight if possible.

2. Process base ingredients (excluding coconut oil) in a food processor for about 2 minutes until combined. Add coconut oil if required so you can press mixture together (if the dates are really plump and fresh, you won’t need it).

3. Press mixture into a loaf tin and set aside in the freezer.

4. With a stick blender, blend dates, coconut oil, coconut cream and 1/4 cup of the coffee that the dates were soaking in until very smooth and creamy. Spread over the base and set in the fridge or freezer until set. Top with freshly ground coffee or walnuts to serve.
