Green Curry Kumara Soup

Lately I have been subbing my green smoothies for green soups as a tasty was to up my leafy greens for the day. So I thought I would share one of my latest fav’s…

Gluten, dairy, refined sugar, egg and nut free, paleo.

Ingredients:

3 – 4 cups organic chicken bone broth (see http://wellnessmama.com/5888/how-to-make-bone-broth/ if you are not a broth addict already)

1 kumara, peeled and roughly diced

1/3 cup leek or 1/2 a red onion, roughly chopped

1/2 cup frozen peas

A good handful of spinach or other leafy greens

1/2 – 1 Tbs green curry paste (check the ingredients to ensure there is no sugar / soybean oil etc if you do not make your own). I used 1 Tbs and it was deliciously firey…I would recommend starting with 1/2 and adding more near the end after tasting

1/4 tsp kelp salt

A handful of fresh coriander

The juice of one lime

1/2 can coconut cream

Directions:

1. In a large saucepan, boil all ingredients until kumara is cooked through and soft.

2. Allow to cool slightly and whizz until smooth with a stick blender.

Yum!
