Bubble & Squeak Patties

There are so many things I heart about winter. A toasty fire, snuggly scarves and reading to Finn in a blanket cocoons. Best of all, I love simple and hearty comfort food that I can whip up in a flash like these easy bubble and squeak patties.

Gluten, dairy, refined sugar, egg and nut free, paleo, vegan.


1 1/2 cup of roasties (we just used kumara)

1 1/2 cup of roughly cut random veggies (we used a grated carrot, a few broccoli florets and a small courgette)

Salt and pepper

Seasoning of your choice (we used dried thyme, but any herbs or spices such as ground cumin and coriander would be nice)

2 Tbs olive oil

Coconut oil for cooking

* The patties are quite soft in the middle when warm. If you would like them to be firmer, add a little flour of your choice such as almond meal, coconut flour or buckwheat flour (they will not be paleo if you add buckwheat).


1. Place roasties in the food processor and process for a minute or so. Add the veggies and process until there are no big chunks.

2. Add oil – it should roughly form a ball

3. Fry in two batches on a medium heat until golden brown on the outside and warmed through.
