Nom nom nom. These little ‘sookies’ (seed cookies) are quick and easy to make and best of all ‘delicious’ according to Finn! Being nut and egg free, they are the perfect little treat for nut free preschools or parties.
Gluten, dairy, refined sugar, egg and nut free, paleo, raw vegan.
1/2 cup activated sunflower seeds
1/2 cup activated pumpkin seeds
1 cup coconut
1/3 cup coconut oil
1/4 cup raw cacao
1/4 cup dates
2 Tbs psyllium husk*
1/4 cup coconut cream
*Psyllium husk is high in soluble fibre, so great to include for a gluten or grain free diet (it is also a great binder to use in place of egg!). It does, however, affect the digestive tract and absorb water, so drinking extra water is very important. Finn’s integrated doctor has recommended we include psyllium husk in his diet daily. Be sure to seek specific professional advice to ensure it is suitable for your family.
1. Whizz dry ingredients in the food processor until chopped finely.
2. Add remaining ingredients and whizz until smooth and cookie-dough like. Add extra coconut oil if the mixture is too dry.
3. Shape into small cookies and press with a fork. Set in the fridge or freezer for at least 30 minutes.
