Life without tomatoes isn’t as hard as it sounds…but it certainly does prove tricky when it comes to a good pizza sauce! I was recently recommended a recipe for ‘nomato sauce’ which has been fairly life changing on this front. Below is our little spin on this recipe, packed with a bit of extra flavour punch!
1 red onion
3 – 4 cloves of garlic, crushed
1/3 cup water
1 tsp salt
6 carrots, roughly chopped (peeled if not organic)
1/2 a beetroot
2 sticks of celery
1/4 cup apple cider vinegar
A large bunch of fresh herbs such as oregano or thyme
1. Sweat onion, garlic and salt in a pan with 1/3 cup water until translucent and very soft (add more water if need be).
2. While cooking the onions and garlic, boil the carrots, celery and beetroot (in just enough water to cover) until very soft. Add herbs and apple cider vinegar and cook for few minutes.
3. Once the vegetable mixture is soft, drain a little water into a cup, set aside, the puree the mixture with a stick blender (adding some of the water if need be) until very smooth. Add salt and apple cider vinegar to taste if need be.
