Christmas Eve Stuffing

For the last few years, we have enjoyed a simple roast chicken on Christmas Eve with this scrumptious stuffing. There are few things that taste more like Christmas than the irresistible flavour of orange zest and cloves. So I thought I would share my not so secret recipe with you this Christmas Eve…

Gluten, dairy, refined sugar, nut and egg free.

Ingredients:

1 1/2 cups fresh/slightly stale sourdough bread cut into rough chunks

2 Tbs ground cloves

Zest of one orange

1 red onion, diced roughly

1 1/2 – 2 tsb salt

1 clove garlic (or garlic powder)

Water

2 Tbs olive oil

Directions:

1. Cook red onion with 1 tsp salt and a few tablespoons of water on a low heat for 10 minutes.

2. Process cooked onion with remaining ingredients until crumbly but sticky. Add more oil if need be.

3. Stuff in chicken or turkey and cook as usual.
