Cranberry Jelly

We are looking forward to Santa visiting our household for the first time this year. Finn is now 2 1/2 and he has hung his stocking on the fireplace and is contemplating whether he will leave Santa beer or coconut water. Dad has suggested beer and Christmas cake but I’m not sure if those items will be in stock on Christmas eve 😉

Our Christmas prep is in full swing now, and today we made our second to last condiment on the list; this deliciously tangy cranberry jelly. It would make an excellent wee Christmas gift for loved ones…

Gluten, dairy, refined sugar (but has a lot of sweetener in it sorry!), nut, soy and egg free, paleo option
Ingredients:

350gm or 3 large cups of fresh or frozen cranberries

Juice of 2 oranges

Approx 1/2 cup honey or sweetener of your choice (use honey for paleo)

1 tsp gelatine (I use Great Lakes as it is sulphite free), optional

 

Directions:

1. Heat cranberries and orange juice on a low/medium heat for around 15 minutes (the skins should start to split).

2. Add sweetener to taste (I used 1/2 which is way more than I had hoped…but it is a special occasion), stir to dissolve, then mash cranberries as much or as little as you want.

3. Sprinkle gelatine over mixture and whisk well to dissolve if using.

4. Pour into a jar and store in the fridge to set.
