BBQ Chicken Drums

Lately I have been chatting amongst friends that have really made such an effort to cut the sugar..an issue that has come up many times is, with no packet sauces etc they struggle to come up with meals that aren’t boring meat and three vege or aren’t the same three sugar free meals they have nailed but they know all too well by now.  For these families struggling for variety, I will be making a bigger effort to blog our dinner time meals, however simple.  I asked my darling 12 year old stepson tonight what he wanted for dinner.. “KFC” was his reply..I didn’t quite have all of the necessary ingredients required for my little bare fried chicken that I have blogged about on here some time ago (probably in the same situation) so i made my BBQ seasoning mix up for seasoning up the chicken tonight and served with a healthy coleslaw and chunky kumara chips baked in coconut oil.  Saturday night dinner taken care of.  The BBQ seasoning is something I make in an empty peanut butter jar and I make about 4 times the recipe below and shake it up and use to season EVERYTHING..great on roasties, chicken, salmon, omelette, nacho mince…

You will need:

2T Smoked Paprika

1 T Paprika

1 t Mustard Powder

2t Mrs Mayvers Garlic Salt (or 1t himilayan sea salt)

Few shakes ground pepper

1t Cayenne Pepper (optional)

1T Coconut oil (melted)

6-8 Chicken Drumsticks

To Make:

Preheat oven to 180 degrees celsius fan forced.

Place chicken drums in a shallow baking dish and drizzle melted coconut oil all over them (try and rub all over and cover most of the skin in the oil).

Place all of the spices in a plastic bag and shake around to mix.

Add the chicken drums to the bag and shake well to coat completely in the spice mix.

Return the seasoned chicken drums to the baking dish and place in the oven for a good 40 mins until the chicken skin is nice and crispy.

You can bake the kumara chips (2 large kumara chopped up) in the oven at the same time on a separate tray with about 1-2 T coconut oil, stirring through the oil a few times until crispy.  Season with good quality sea salt.

I cheated with the coleslaw tonight and bought a bag from the supermarket called immunity slaw or something like that, I immediately threw away the dressing and just dressed it myself with olive oil, lemon juice and dijon mustard all shaken up together.

Kumara is so cheap at the moment..$3 a kg, chicken drums can be too when you get them on special and the bag of coleslaw was all of $4.  Eating healthy doesn’t always have to be expensive or complicated and it’s often the simple recipes that please even the most junk loving 12 year olds :p
