Cacao & Mint Avocado Smoothie

Feeling like something a little different today, I decided to make good use of the fresh mint growing (abundantly!) in my garden at the moment. Chocolate and mint is obviously a match made in heaven, and this refreshing smoothie is a great snack that is both nutritious and delicious!

Feel free to ad-lib to your heart’s content; I have listed a few suggestions of optional extras depending on what you would like to supercharge your smoothie with. I opted to use avocado as I have a bit of a banana phobe (and it’s more filling for a breastfeeding mumma!), but I have suggested banana as an alternative as it would give it the sweetness and creamy texture it needs to layer.

 

Gluten, dairy, refined sugar, egg and soy free, nut free option, paleo, raw vegan

Ingredients:

Choc layer

2 tsp Little Bare organic raw cacao powder

1/3 cup ice (about 4 – 5 cubes)

2 Tbs Little Bare coconut cream

1/2 an avocado or banana

1/2 cup almond / other milk or water

1 tsp pure vanilla

2 medjool dates or dried dates soaked in boiling water (optional)

Optional extras: chia, flaxseed, nuts or seeds, maca powder, slippery elm

Mint layer

Approx 12 large mint leaves

A small handful of fresh spinach or other greens

1/2 an avocado or banana

1/3 cup ice (about 4 – 5 cubes)

2 Tbs Little Bare coconut cream

1/2 cup almond / other milk or water

Sweetener such as dates, coconut sugar or raw honey (optional) if using avocado

Optional extras: spirulina, chia, flaxseed, matcha powder, pumpkin seeds

 

Directions

1. Blend, then layer by pouring slowly over the back of a spoon. Add more liquid if it does not blend well and if using banana, add more if it needs thickening (as banana sizes will obviously vary).
